- 2 cups apples, diced 240 g
 - 1 tsp lemon juice 5 g
 - 1/2 cup butter 113 g
 - 1/3 cup brown sugar 60 g
 - 1 egg
 - 3/4 cup applesauce 180 g
 - 1 tsp vanilla extract 6 g
 - 1 1/2 cups flour 180 g
 - 2 tsp baking powder 8 g
 - 1 tsp cinnamon 5 g
 - 1/2 tsp salt 3 g
 - 20 soft caramels
 
Instructions
- Preheat the oven to 375º F. Line a muffin pan with cupcake wrappers.
 - In a bowl, combine the diced apples and the lemon juice. Set the apples aside.
 - In a saucepan, brown the butter over medium heat. Pour the butter into a mixing bowl to let it cool.
 - Add the brown sugar, egg, applesauce, and vanilla extract. Whisk the mixture until it is smooth.
 - Mix the flour, baking powder, cinnamon, and salt until the batter is smooth. Fold in the apples. Cut up 10 caramels into smaller pieces and add them to the batter.
 - Scoop the batter into the prepared baking pan. Top each muffin with a soft caramel.
 - Bake the muffins for 20-25 minutes. Remove the muffins from the oven and let them cool.
