Caramel Apple Muffins

These muffins are made with a brown butter and applesauce spiced cake, then filled with apple and caramel chunks and topped with soft caramels. They have that nostalgic flavor of a caramel apple during the fall season. This recipe is sure to make your kitchen smell incredible.

- 2 cups apples, diced 240 g
- 1 tsp lemon juice 5 g
- 1/2 cup butter 113 g
- 1/3 cup brown sugar 60 g
- 1 egg
- 3/4 cup applesauce 180 g
- 1 tsp vanilla extract 6 g
- 1 1/2 cups flour 180 g
- 2 tsp baking powder 8 g
- 1 tsp cinnamon 5 g
- 1/2 tsp salt 3 g
- 20 soft caramels
Preheat the oven to 375º F. Line a muffin pan with cupcake wrappers.
In a bowl, combine the diced apples and the lemon juice. Set the apples aside.
In a saucepan, brown the butter over medium heat. Pour the butter into a mixing bowl to let it cool.
Add the brown sugar, egg, applesauce, and vanilla extract. Whisk the mixture until it is smooth.
Mix the flour, baking powder, cinnamon, and salt until the batter is smooth. Fold in the apples. Cut up 10 caramels into smaller pieces and add them to the batter.
Scoop the batter into the prepared baking pan. Top each muffin with a soft caramel.
Bake the muffins for 20-25 minutes. Remove the muffins from the oven and let them cool.
