Caramel Apple Muffins

These muffins are made with a brown butter and applesauce spiced cake, then filled with apple and caramel chunks and topped with soft caramels. They have that nostalgic flavor of a caramel apple during the fall season. This recipe is sure to make your kitchen smell incredible.

Ingredients
  

  • 2 cups apples, diced 240 g
  • 1 tsp lemon juice 5 g
  • 1/2 cup butter 113 g
  • 1/3 cup brown sugar 60 g
  • 1 egg
  • 3/4 cup applesauce 180 g
  • 1 tsp vanilla extract 6 g
  • 1 1/2 cups flour 180 g
  • 2 tsp baking powder 8 g
  • 1 tsp cinnamon 5 g
  • 1/2 tsp salt 3 g
  • 20 soft caramels

Instructions
 

  • Preheat the oven to 375º F. Line a muffin pan with cupcake wrappers.
  • In a bowl, combine the diced apples and the lemon juice. Set the apples aside.
  • In a saucepan, brown the butter over medium heat. Pour the butter into a mixing bowl to let it cool.
  • Add the brown sugar, egg, applesauce, and vanilla extract. Whisk the mixture until it is smooth.
  • Mix the flour, baking powder, cinnamon, and salt until the batter is smooth. Fold in the apples. Cut up 10 caramels into smaller pieces and add them to the batter.
  • Scoop the batter into the prepared baking pan. Top each muffin with a soft caramel.
  • Bake the muffins for 20-25 minutes. Remove the muffins from the oven and let them cool.
