A variation of my classic chocolate chip cookie recipe, these cookies use an avocado instead of butter, replacing saturated fats with healthier unsaturated fats. I made these for Saint Patrick’s Day, but they are also a great healthy alternative.

These avocado chocolate chip cookies are just like normal cookies, but with an avocado instead of butter. This ingredient gives them a green tint and amazing health benefits. Don't worry -- they don't taste like guacamole!

Ingredients
- 1 avocado, mashed
- 1 cup granulated sugar 200 g
- 1 egg
- 2 tsp vanilla extract 10 g
- 1 1/2 cup flour 180 g
- 1/2 tsp salt 3 g
- 1/2 tsp baking soda 3 g
- 1 cup chocolate chips 170 g
Instructions
- Line a baking sheet with parchment paper. Preheat the oven to 350º F.
- In a mixing bowl, mash the avocado until it is smooth. Add the sugar and beat until well combined.
- Mix in the egg and vanilla extract. Stir in the flour, salt, and baking soda until the mixture is smooth. Add the chocolate chips.
- Scoop the cookies using a cookie scoop onto the prepared baking sheet.
- Bake the cookies for 12-15 minutes or until lightly browned on the edges. Remove the cookies from the oven and let them cool.
