Peanut Butter Protein Cups

These protein cups contain a peanut butter oat filling and a dark chocolate protein. They are the perfect post-workout snack because of their balanced macronutrients. This recipe also requires minimal effort for a quick snack.

Ingredients
  

  • 1/2 cup peanut butter 100 g
  • 1/4 cup maple syrup 50 g
  • 1 tsp vanilla extract 3 g
  • 1/4 tsp salt 1 g
  • 1 scoop protein powder 20 g
  • 1 cup oats 80 g
  • 1/2 cup chocolate chips 80 g

Instructions
 

  • Line a muffin pan with cupcake liners.
  • In a mixing bowl, stir together the peanut butter, maple syrup, vanilla extract, and salt. Add in the protein powder and oats and stir until combined.
  • Press a tablespoon of the mixture into each cupcake liner. Let the peanut butter cups chill in the refrigerator.
  • Melt the chocolate in the microwave in 30-second increments. Pour a spoonful of chocolate onto each peanut butter cup.
  • Let the peanut butter cups chill in the refrigerator until the chocolate is set. Store them in the refrigerator until ready to serve.
