Apple Fritter Cake

This apple cake has two layers -- a fluffy cinnamon cake and juicy cooked apples. The end result is a delicious spice cake drizzled in icing. It is the perfect comfort food.

Apples
- 2 apples
- 2 tbsp butter 28 g
- 1/4 cup brown sugar 50 g
- 1/2 tsp cinnamon 3 g
Cake
- 1/4 cup butter, melted 56 g
- 1/4 cup brown sugar 50 g
- 1/4 cup Greek yogurt 60 g
- 1 egg
- 1 tsp vanilla extract 5 g
- 1 1/3 cup flour 170 g
- 1/2 tsp baking soda 3 g
- 1/2 tsp baking powder 2 g
- 1/4 tsp salt 1 g
- 1/2 tsp cinnamon 3 g
- 1/2 cup milk 100 g
Icing
- 1/4 cup powdered sugar
- 1 tsp milk
Apples
Wash and peel the apples. Dice the apples into 1 cm cubes.
Place the apples in a saucepan with the butter, brown sugar, and cinnamon. Cook over medium heat for 5 minutes, or until apples have softened slightly and the butter has melted.
Remove the apples from the heat and set aside.
Cake
Prepare an 8 inch cake tin. Preheat the oven to 350º F.
In a mixing bowl, whisk together the butter, brown sugar, Greek yogurt, egg, and vanilla extract. Add the flour, baking soda, baking powder, salt, and cinnamon. Pour in the milk while stirring until a batter forms.
Add half of the batter to the prepared cake tin. Add half of the apples with their brown sugar sauce. Pour the remaining batter over the apples and top with the remaining apples.
Bake the cake for 30-40 minutes or until a toothpick comes out clean when inserted. Remove the cake from the oven and let it cool.
