These brownies are rich and fudgy, filled with peanut butter cups and chocolate flavor. With the addition of peanut butter and Reese’s cups, the brownies are definitely elevated to another level. Although this recipe doesn’t have any “healthy swaps” such as avocados or sweet potatoes, they are a delicious treat that can and should be enjoyed in moderation.

Ingredients
- 1/3 cup butter 65 g
- 3/4 cup brown sugar 150 g
- 1/3 cup avocado oil 60 g
- 2 eggs
- 1 tsp vanilla extract 5 g
- 3/4 cup cocoa powder 75 g
- 1/2 cup flour 60 g
- 1/4 tsp baking powder 2 g
- 1 tbsp cornstarch 10 g
- 1/4 tsp salt 2 g
- 12 peanut butter cups, chopped
- 1/4 cup peanut butter
Instructions
- Line an 8x8 or 9x9 baking pan with parchment paper. Preheat the oven to 325º F.
- In a bowl, combine the butter and sugar. Heat in a saucepan or microwave for 1 minute until sugar is melted.
- Whisk in the oil, eggs, and vanilla extract. Add the cocoa flour, baking powder, cornstarch, and salt.
- Fold in the chopped peanut butter cups. Pour the batter into the prepared baking pan.
- Melt the peanut butter in the microwave for easy pouring. Pour the peanut butter on top of the brownie batter, and use a skewer to make a swirl design. Top with more chopped peanut butter cups.
- Bake the brownies for 30 minutes or until a skewer comes out with a few crumbs when inserted. Remove the brownies from the oven and let them cool, then slice and serve.
