Getting up early to make pancakes for my family has to be one of my favorite things to do. While this recipe can take longer than a typical breakfast, it’s just a great way to start a special day. My pancake recipe is simple but produces the best nostalgic fluffy pancakes.
Why is this recipe healthy?
Pancakes for breakfast (or dinner!) provides the carbohydrates our body craves. Therefore, they are a great source of quick energy. My recipe also contains Greek yogurt, which significantly increases the protein content. I also like to add fruit for fiber to fully balance this meal. However, pancakes are a breakfast that is meant to be enjoyed without worrying about nutrients.

Ingredients
- 1 1/4 cup flour 150 g
- 1 tbsp granulated sugar 10 g
- 1/4 tsp salt 1 g
- 1 tsp baking soda 3 g
- 1 tsp baking powder 2 g
- 1 egg
- 1 tsp vanilla extract 3 g
- 3/4 cup buttermilk (see notes) 180 g
- 1/4 cup Greek yogurt 60 g
- 2 tbsp butter, melted 26 g
- maple syrup
Instructions
- In a mixing bowl, whisk together the flour, sugar, baking soda, baking powder, and salt until they are well combined.
- In a separate mixing bowl, whisk together the egg, vanilla extract, buttermilk, and Greek yogurt. Fold in the dry ingredients until just combined. Stir in the melted butter.
- On a buttered skillet over medium heat, pour 1/4 cup of the pancake batter. Cook until the top is bubbly, then flip. Continue cooking until the pancake is golden brown on both sides. Repeat the process with the rest of the batter.
- Serve the pancakes fresh with fruits, other desired toppings, and a drizzle of maple syrup.
Notes
- If you don't have buttermilk, no worries! An easy substitute is to use milk with 1 tbsp of vinegar or lemon juice. Stir and let the mixture sit for 5 minutes, then it will be ready to use.
- Adjust the size of the pancakes based on your preference. For me, this recipe has made 6 6-inch pancakes or 8 5-inch pancakes.
