Ingredients
- 3 ripe bananas mashed
- 2 eggs
- 1/3 cup maple syrup 70 g
- 1/2 cup Greek yogurt 130 g
- 1 teaspoon vanilla extract
- 1 1/2 cups whole wheat flour 180 g
- 1/3 cup almond flour 30 g
- 1/2 teaspoon cinnamon 3 g
- 1 teaspoon baking soda 6 g
- 1/4 teaspoon salt 1 g
- 1/4 cup butter, melted 56 g
- 1/2 cup chopped walnuts or chocolate chips 100 g
Instructions
- Preheat the oven to 350º F. Prepare a loaf pan by greasing the sides and bottom of the pan.
- In a bowl, mix together the mashed bananas, eggs, maple syrup, yogurt, and vanilla extract until it is well combined.
- In a separate bowl, whisk together the flour, almond flour, baking soda, cinnamon, and salt. Slowly incorporate the dry ingredients into the wet ingredients.
- Gently fold in the melted butter. Fold in the walnuts or chocolate chips. Pour the batter into the prepared loaf pan.
- Bake the banana bread for 50 to 60 minutes, or until a skewer inserted comes out clean. Remove the banana bread from the oven and let it cool on a cooling rack.
Notes
- Because the banana bread is full of flavor, I was able to sneak in whole wheat flour without being bothered by the taste or texture. However, all-purpose flour will work perfectly fine!
