Matcha Banana Wreath Cake

Ingredients
- 2 ripe bananas, mashed
- 1 tbsp lemon juice 10 g
- 6 tbsp butter, melted 80 g
- 1/2 cup brown sugar 90 g
- 1/4 cup Greek yogurt 40 g
- 1 egg
- 1 tsp vanilla extract 6 g
- 1 cup flour 120 g
- 1/2 tsp baking powder 3 g
- 1 tbsp matcha powder 15 g
- 1/4 tsp salt 2 g
- 1/4 cup powdered sugar 30 g
- 1 tsp milk 5 g
- cranberries, for topping
Instructions
- Grease a bundt pan. Preheat the oven to 350º F.
- In a mixing bowl, combine the mashed banana and lemon juice. Add the butter, brown sugar, Greek yogurt, egg, and vanilla extract.
- Gently stir in the flour, baking powder, matcha powder, and salt. Mix until a batter forms. Spread the batter into the prepared baking pan.
- Bake the cake for 25-35 minutes or until a skewer comes out clean when inserted. Let the cake cool.
- In a bowl, combine the powdered sugar and milk until an icing forms. Drizzle the icing over the cooled matcha cake. Garnish with cranberries as desired.
